Grilled pesto chicken and veggies…followed by s’mores for dessert :)
Cooked dinner for 2 :)
Quinoa sautéed with garlic, tomatoes, cilantro and lemon juice. Tofu panko crusted prepared in the oven. Red potatoes and bell peppers mixed with olive oil and roasted. Tilapia seasoned with Mrs.Dash and seared in lemon and garlic.
Made brunch this morning.
Left over adobo and rice? —> Chicken adobo fried rice with a side of pochos and eggs :)

Belated bday dinner with Rays oahu family for his deuce deuce. Ate way too much but it hurts so good!

One of the things I missed the most about home: Home Cooked meals by Mom.
The only request I put in this break was Beef Stew :)

Late night run to Zippy’s to feed our fat asses.
Dry mein, won ton mein and french fries on this rainy st. patty’s night. Didn’t find a 4 leaf clover or pot of gold this year, but this lucky girl already found this guy 4 years ago :)
Cream of mushroom porkchops with fresh mushrooms and corn for dindin…
…without the power turning off this time! :)

Spent the day at school on a day that I don’t have school to be productive, which was a success. And now after a long day of Ochem, cooked up some Pesto Salmon and Pasta in observance of Lent.
